Italian Saffron Risotto with Parmesan

📋 Ingredients:

  • 1 cup Arborio rice
  • 1 small onion, finely chopped
  • 2 tbsp butter
  • A pinch of saffron soaked in ¼ cup warm water
  • 1 liter hot vegetable or chicken broth
  • ⅓ cup grated Parmesan cheese
  • Salt and black pepper

  1. In a large pan, melt the butter and sauté the onion until soft.
  2. Add rice and stir for 2 minutes.
