Saffron Quinoa Tabbouleh with Mint

Ingredients:

  • 1 cup cooked quinoa
  • 1 diced tomato
  • ½ cucumber, chopped
  • 2 tbsp chopped fresh mint
  • Juice of 1 lemon + saffron threads
  • Olive oil, salt

  1. In a bowl, combine quinoa, tomato, cucumber, and mint.
  2. Mix lemon juice with saffron water and drizzle over the salad.
  3. Add olive oil and salt to taste. Chill and serve.
